Mocha Browned Butter Salted Caramel Cookies


This is one of those cookies that you need to experience, not just eat.
I mean - take the phone off the hook, brew a nice cup of coffee (or hot chocolate if you are like me), get in your comfy pants, put your feet up, put your favorite movie/tv show on, and let the cookie eating begin. 
Even if you are not a coffee fan, the mocha flavor of this cookie when combined with the browned butter, chocolate, and salted caramel is just phenomenal. 
Like *jazz hands* PHENOMENAL!
You should make these.
Really.
Right now.


Mocha Browned Butter Salted Caramel Cookies
(Slightly adapted from Kevin & Amanda)

Ingredients
1 cup butter
2 1/4 cup flour
2 Tbsp instant coffee granules
1 tsp baking soda
1 1/2 cups brown sugar
1 egg
1 egg yolk
2 tsp vanilla
1/2 cup Kraft caramels, quartered
1 cup mini chocolate chips
coarse sea salt, for sprinkling

Directions
Preheat oven to 350. Line a cookie sheet with parchment paper, set aside.
Brown the butter by placing it in a saucepan over medium heat. Once the butter starts to foam, begin whisking constantly. When the butter turns brown with little bits on the bottom, remove from heat and transfer to a large mixing bowl. Set aside to cool.
In a smaller mixing bowl, stir together flour and baking soda. Set aside.
When the butter has cooled (at least 20 minutes - I usually pop it in the fridge for 10 minutes), beat the butter and brown sugar together until smooth. Beat in egg, egg yolk, and vanilla until well combined.
Beat in the dry ingredients, caramels, and chocolate chips until just combined.


Using a medium cookie scoop (about 2 Tbsp), place about 2 inches apart on prepared cookie sheet. 
Bake at 350 until cookies are lightly browned on the bottom, about 10 minutes. 
When done, remove from heat and sprinkle with the coarse sea salt. Let cool on cookie sheet for 5 minutes before moving to wire rack to cool completely. 
*I used a small cookie scoop and a large cookie scoop just to get different sizes. The small ones (about 1 Tbsp) took about 5 minutes to cook, the large ones (about 3 Tbsp) took about 10 - 12 minutes. *


I love the crunchy-ish edge and soft and chewy center. 
And...don't even get me started on the gooey caramel and melty chocolate when these bad boys are warm...
Serve these at the next coffee time and see how many new best friends you end up with.

5 Minute Chocolate Turtle Cake


I decided to update a blog that we did a while ago about a 5 Minute Chocolate Cake.
See....BACK THEN I didn't have access to our nephew's awesome camera so the photos just did NOT do it justice. 
And then I thought, "Well heck, why just update the photos when you can update the cake too?"
And then I went crazy and turned chocolate cake into caramel-pecan-whipped-cream cake..aka Turtle Cake.
And then I decided to eat the cake.
Hey.... at least I got photos of it first.


5 Minute Turtle Cake

Ingredients
4 Tbsp flour
4 Tbsp sugar
2 tbsp unsweetened baking cocoa
2 Tbsp whisked egg
3 Tbsp milk
3 Tbsp oil
1 Tbsp chocolate chips
2 quartered Kraft Caramels

Topping
caramel ice cream sauce
chocolate ice cream sauce
chopped pecans
whipped cream

Directions
Mix flour, sugar, and cocoa together in a bowl. Using a fork or small whisk, whisk in the egg, milk, and oil until well combined.
Spray a microwave safe bowl or coffee mug with cooking spray. Scrape the cake batter into the prepared bowl (or mug). Sprinkle with the chocolate chips and caramels.
Cook in microwave for approx 3 minutes.
*If you use a mug - don't be alarmed if the cake rises above the rim of the glass, it will shrink back down.*
Remove from microwave and let sit for 5 minutes. Run a knife around the bowl (or mug) to loosen cake. Invert onto a serving plate.
Top generously with caramel ice cream topping, chocolate ice cream topping, and pecans.


Then top with whipped cream and more caramel sauce. Oh..and pecans too...


Um...so..yeah...
I'd like to say I'm sorry about this...thing is....I'm really not.
Turtle Cake in 5 minutes? Yeah....it's a thing now. 
**Important Note**
Measure your ingredients carefully. 
For example - whisk your egg and use 2 Tbsp of it. DO NOT just use the yolk or the white thinking it will save a step. It will change the texture of the cake.

Beet Wraps With Cranberry Garlic Cream Cheese Spread


Every year for the last couple of years a lovely blogger named Jen over at Beantown Baker runs a Power Of Pink Challenge to help promote breast cancer awareness.  
This year we are, once again, using beets to come up with pinker-than-pink veggie wraps and cranberries to create a savory spread.

Beet Wraps with Cranberry Garlic Cream Cheese Spread

Ingredients
Beet Wraps
2 - 3 large beets, peeled
3 cloves garlic
2 Tbsp onion, finely diced
1/2 jalapeno, seeded and finely diced
1/4 cup Mozza cheese, shredded
1 egg

Cranberry Garlic Cream Cheese Spread
1/2 brick cream cheese (4 oz), softened
1/4 cup cranberry sauce
2 cloves garlic, minced
2 Tbsp onion, finely diced

Filling
lettuce, shredded
turkey sausage, sliced thinly
feta cheese, crumbled
onions, thinly sliced

Directions
Preheat oven to 425. Line a cookie sheet with parchment paper, set aside.
Take peeled beets and process in a food processor until finely shredded. Take the shredded beets and, using a cheesecloth or clean piece of material, squeeze as much liquid out of the beets as possible. 
You will need approximately 1 1/2 to 2 cups of beets after draining.
Place beets in a bowl and add in garlic, onion, jalapeno, Mozza cheese, and egg. Stir to combine well - use your hands if necessary. 
Pat out two 8 inch circles on the prepared cookie sheet.


Bake at 425 for 15 minutes. Remove from heat - the crusts should look fairly dry, if they don't cook another 4 - 5 minutes.
If they look dry enough - carefully flip the wraps over onto another piece of parchment paper, return to the cookie sheet, and bake another 5 minutes.


Remove from heat, use the parchment paper to slide the wraps off the cookie sheet onto a wire rack. Slide the parchment paper out from under them and let them cool completely. You can slip them into the fridge for a few minutes to speed this along.
Prepare the cranberry garlic cream cheese spread - Beat cream cheese until smooth. Beat in the cranberry sauce, garlic, and onion until well combined and smooth. 
Chill until ready to use. 
Assemble the wraps - Spread the wraps generously with the cranberry garlic cream cheese spread. Top with some shredded lettuce, turkey sausage, feta, and onions down the center of the wrap.


Roll up and secure with a toothpick - if necessary. (Mine were okay without a toothpick as the cranberry spread helped it stay rolled up.)
Can't get much more pink than that - dark pink beet wraps, light pink cranberry spread, and medium pink turkey sausage!


To come up with these wraps Sue and I re-worked our Beet Crust Pizza recipe. Either way you want to prepare this recipe, you will end up with tasty, healthy, uber pink, cooler-than-cool meals.

Layered Pumpkin Cheesecake


It's just not Thanksgiving without some kind of pumpkin dessert. 
True story. Don't even argue.
I decided to go with my layered pumpkin cheesecake for this year's dinner as no one seemed too interested in pumpkin pie. 
Except me.
But I was out-voted.
*sigh*
This cheesecake is my compromise. Cheesecake + pumpkin pie = best dessert ever. 
Plus, it's super simple to make but looks so lovely with 4 different layers of colors.


Layered Pumpkin Cheesecake

Ingredients
Crumb Crust
1 1/2 cups graham cracker crumbs
2 Tbsp brown sugar
1/3 cup melted butter

Cheesecake Layer
2 X 8 oz bricks cream cheese
1/2 cup sugar
2 tsp vanilla
2 eggs

Pumpkin Cheesecake Layer
1 cup pumpkin puree
2 tsp pumpkin pie spice

Whipped Cream Layer
1 cup whipping cream
2 Tbsp sugar
1 tsp vanilla
Sprinkle of cinnamon

Directions
Preheat oven to 325. Spray the bottom of an 8 inch springform pan, set aside.
Prepare crust - In a mixing bowl, stir together the graham cracker crumbs, brown sugar, and melted butter until well mixed. Press into the bottom and a little ways up the sides of the prepared springform pan. Set aside.


Prepare cheesecake layer - In a mixing bowl, beat the cream cheese until smooth. Beat in the sugar and vanilla until well mixed. Beat in the eggs until smooth. 
Scoop out a generous 1/2 cup of the cheesecake filling and spoon it over the graham crust, spreading to cover crust. Reserve the remaining filling for the next step.


Prepare pumpkin cheesecake layer - Take the remaining cheesecake mixture and stir in the pumpkin puree and pumpkin pie spice until thoroughly combined. 
Spread this on top of the cheesecake layer, smoothing the top.


Bake at 325 for 30 - 40 minutes. Until top appears dry and cheesecake is set. (If top cracks it is okay, you will be putting whipping cream on top!)
Remove from oven and let cool to room temperature. Carefully remove the sides of the springform pan.


Prepare whipping cream - Beat the whipping cream with the sugar, vanilla, and cinnamon until stiff peaks form. Spread topping on top of the cooled cheesecake.
Chill cheesecake for at least 4 hours, up to overnight.


This got rave reviews at our Thanksgiving dinner. 


Orra's boyfriend, Jim, gave it a big thumbs up. 
Even after I dropped his piece upside down on the counter while trying to serve it. *oops*
You can whip this up the day before you want to serve it, especially if you are planning to serve it for a big meal, and have it chilling in the fridge, covered. Of course, if you want to make it for dinner tonight, that also works, you just want to make it early so it can chill for at least 4 hours. 
*NOTE* - A couple of cheats for this recipe: 1. You can use a store bought graham cracker pie crust. 2. You can use thawed Cool Whip to top it. We find it better to go all out and make your own BUT we won't judge you if you decide to cheat. :)

Pork Tenderloin Dinner (4 recipes)


I had an extra day off from work thanks to the Thanksgiving long weekend and decided to make a bit of a fancier meal to celebrate. 
I did most of the prep work in the morning so I could clean everything up and all I had to do was throw everything in the oven when it was supper time. 
Pork tenderloin cooked in the slow cooker, some stuffing & sausage balls, Hasselback potatoes, and some spaghetti squash. So many flavors and textures and, you know what, they went soooo well together. 
Next time I need to impress some guests, I am definitely making this combination again. 
The stuffing balls are my new favorite.
I decided to share all 4 recipes with you today just in case you decide to give it a go too! 
We'll start with the Pork Tenderloin...


Pork Tenderloin In The Slow Cooker

Ingredients
1/2 cup soy sauce
1/2 cup olive oil
2 Tbsp Italian seasonings
2 Tbsp brown sugar
2 Tbsp honey
2 Tbsp malt vinegar
3 cloves garlic, minced
1 to 1 1/2 lb pork tenderloin

Directions
Combine soy sauce, olive oil, seasonings, sugar, honey, vinegar, and garlic in a large Ziploc bag. Marinate meat in the fridge for at least 4 hours. 
When ready to cook, place meat and marinade in the slow cooker on low and cook until meat is done, about 4 - 5 hours depending on your slow cooker. Check temp with a meat thermometer. 
When the rest of the meal is ready to serve, remove tenderloin from slow cooker and slice. 


And now for the stuffing balls.


Sausage & Stuffing Balls

Ingredients
1 lb sausage meat
1 stalk celery, finely diced
1/2 medium onion, finely diced
1/4 cup dried cranberries, finely chopped
1/2 cup aged cheddar cheese, shredded
1 box Stove Top Stuffing mix
1 cup chicken broth
2 eggs

Directions
Preheat oven to 375. Line a cookie tray with parchment paper or Silpat baking mat, set aside.
In a medium frying pan, cook sausage meat until no longer pink. Add in the celery and onion and cook, stirring often, until vegetables have softened - about 4 - 5 minutes. Remove from heat and let cool a bit.
In a large bowl, combine cranberries, cheese, and Stove Top Stuffing. Stir in the cooked sausage mixture.
Add in the chicken broth and 2 eggs. Stir well to combine. (You may want to use your hands to make sure everything is really mixed!)
Using a cookie scoop (or pinch off a golf ball sized amount of the mixture), press mixture into a ball and set on prepared cookie sheet.


Bake at 375 for about 15 minutes or so, until balls are cooked through and tops are browned. (**Note - you can also prep these in the morning and simply cover on the cookie sheet and refrigerate until ready to cook the rest of the meal.)

How about some Hasselback potatoes??


Hasselback Potatoes

Ingredients
Garlic Butter
1/2 cup butter, room temp
3 cloves garlic, minced
1/4 tsp garlic powder

Potatoes
4 medium/large potatoes, scrubbed but not peeled
aged cheddar, sliced into thin slices
1 recipe garlic butter (recipe above)
sea salt
Parmesan cheese, grated fine


Directions
Make garlic butter - stir together room temp butter, minced garlic, and garlic powder until well combined. Scoop onto a piece of plastic wrap and use the wrap to shape butter into a long cylinder. Chill butter until firm. When firm, slice into very thin slices. Set in fridge until ready to use.


Preheat oven to 400. Line an oven safe baking dish with parchment paper, set aside.
Bring a large pot of water with 1 tsp of salt in it to a boil. Place the potatoes in the boiling, salted water and boil for 10 minutes. Remove from heat and let cool until you are able to pick them up.
When cool enough, Slice the potatoes into 1/4 inch slices, being careful to only go about 3/4 of the way through the potato. Don't cut all the way through!!
Carefully place the thinly sliced cheddar cheese and the thinly sliced garlic butter into the slices in the potato. 
Once stuffed, place the potatoes in the prepared baking dish.


Sprinkle with a little sea salt and finely grated Parmesan cheese.
Bake at 400 for about 40 minutes - until potatoes are cooked through. 

And, last but not least, some spaghetti squash!


Spaghetti Squash Bake

Ingredients
1 large spaghetti squash
3 button mushrooms, chopped
1/4 red pepper, chopped
1/4 cup onion, diced
1 cup spaghetti sauce
1/4 cup Parmesan cheese, finely grated

Directions
Cut spaghetti squash in half and scoop out seeds. Discard the seeds or reserve for another use.
Cook the spaghetti squash by either microwaving, facing down, on a plate until fork tender OR by baking, face down, in the oven until for tender. (Microwaving can take between 10 - 15 minutes, baking takes about an hour or so)
In a small frying pan, cook mushrooms, red pepper, and onion until vegetables are soft. Stir in the spaghetti sauce. Remove from heat.
Preheat oven to 375. 
Prepare an oven safe baking dish by spraying with cooking spray, set aside.
When cooked and then cooled enough to handle; scoop one half of the spaghetti squash into the prepared dish. Spread the spaghetti sauce and vegetables on top of the squash.
Scoop the other half of the spaghetti squash on top of the sauce. Top with the grated Parmesan cheese.
Bake at 375 for about 30 - 40 minutes. Until heated through and bubbling. 


Here are my notes on how I prepared everything so it was ready all at the same time:
In the Morning
1. Place tenderloin in the marinade.
2. Prepare stuffing & sausage balls and place them on the cookie sheet. Cover and chill.
3. Make garlic butter for the potatoes. Cover and chill.
In the Afternoon
1. Cook squash.
2. Place tenderloin in the slow cooker on low.
1 hour before dinner time
1. Bring salt water to boil & boil potatoes for 10 minutes. Remove and let cool until able to handle.
2. Prepare potatoes and place in 400 oven.
3. Prepare squash bake in baking dish. 
4. Remove stuffing balls from fridge.
When potatoes have cooked for 30 minutes - turn down the oven to 375. Place potatoes and squash dishes on the center rack, place stuffing balls on lower rack.
Cook 20 minutes.
Switch the stuffing balls to the middle rack and the squash and potatoes to the bottom rack.
Cook another 10 - 20 minutes, until everything is done.

Following these instructions the tenderloin, potatoes, stuffing, and squash were all ready at the same time. **Keep in mind it really helps to know how your slow cooker cooks!**

Concord Grape Ice Cream


Concord grape ice cream is a fantastic idea, in case you were wondering.
The flavor is subtle yet very recognizable. 
I served it at Thanksgiving with some chocolate black out cake that I made for dessert.


Don't mind the color in that photo. It really is more purple-y (like in the first photo). I am pretty sure the lighting at Sue's house is to blame. 
Anyways..... it went marvelously with the cake. 
And on it's own. 
The entire batch was consumed during dessert. 
This ice cream does not freeze that hard so you don't want to leave it out of the freezer too long. 
If you don't have an ice cream machine then I recommend getting one. Making your own ice cream opens up a whole new level of ice cream flavor and texture experiences. 


Concord Grape Ice Cream

Ingredients
Grape syrup
2 cups grape juice (from Concord grapes)
1 cup sugar

Ice cream
2/3 cup sugar
2 eggs
1 cup whipping cream
2 cups half & half
1 tsp vanilla
2 cups grape syrup (recipe above)

Directions
Heat grape juice and sugar in a medium sauce pan. Bring to a boil, reduce heat, and simmer for  approximately 20 - 30 minutes, stirring occasionally. It will reduce a bit BUT you still want to have 2 cups of syrup at the end.
After it has simmered, remove from heat and let cool a bit.
In the bowl of a stand mixer, beat sugar and eggs until well combined. Beat in cream, half & half, and vanilla on low speed. Slowly add in the grape syrup, beating continuously, until well mixed.
Chill mixture in fridge for about 2 hours. 
After it is thoroughly chilled, place in ice cream maker and process according to manufacturer's directions
Store, covered, in freezer until firm. 

This is definitely one of those unusual ice cream flavors that people will remember and ask you to make again and again.
*Note* - We used the juice from grapes in our garden. You don't want to use a store bought grape juice filled with sugars. Just steam the grapes to open the skins and then press the grapes to get the juice out. You can discard the skins after pressing them.
