Potato Salad Dressing (and potato salad)


I wanted to call this I-Know-It's-A-Lot-Of-Work-But-It-Really-Is-The-Tastiest-Dressing-Ever Dressing but I figured that name was a little wordy.
Here's the thing...
This dressing is really good.
Like.... REALLY good.
But I think a lot of people will be dissuaded from trying to make it because there is a few steps to go through. It's not at all difficult, there is just more work involved then the usual dressing recipe.
It is super-de-duper tasty on potato salad but is also great on macaroni salad or broccoli or cauliflower salad.
I am thinking this would also work as a dip for chicken fingers and such.


Potato Salad Dressing
(and potato salad)

Ingredients

Dressing
1/2 cup water
1/4 cup butter, cubed
2 Tbsp vinegar
1 egg
1/4 cup sugar
2 1/4 tsp cornstarch
1/4 cup + 2 Tbsp Miracle Whip
1/4 cup + 2 Tbsp whipping cream (heavy cream)

Salad
6 cups new potatoes, rinsed and scrubbed
1/4 tsp dry mustard
1 small onion, diced
1 stalk celery, diced
2 large radishes, diced
2 eggs, boiled and sliced

Directions
Dressing: In the top of a double boiler or metal bowl over barely simmering water, heat water, butter, and vinegar until butter is melted.
In a small bowl, beat egg, sugar, and cornstarch until well combined. Add to butter mixture; cook and stir for 5 - 8 minutes, until thickened. Transfer to a large bowl and cool completely.


When cool, stir Miracle Whip into the cooled dressing.
Beat whipping cream until stiff peaks form and fold into dressing.


Cover and set in fridge while you make salad.

Seeeeeeeee.....look how smooth and creamy it is!!

Salad: Place potatoes in large pot and fill with water. Bring to a boil. Reduce heat; cover and cook about 10 - 15 minutes or so...until potatoes are fork tender. Drain and set potatoes aside to cool.
When cool, place potatoes in large bowl and sprinkle with mustard powder. (I like to cut potatoes in half or quarters depending on how small they are.)  Add onion, celery, radishes, and one of the eggs.
Stir in a generous amount of dressing and then top with the other sliced egg.


Oh my goodness! So delicious.
Look, it's just as scrumptious on macaroni salad.


It's times like this that I am sad they haven't invented a way to taste things through the computer.
*Sigh*
I guess it's better they don't have that. I would weigh a million or so pounds.
Anyway, this makes quite a bit of dressing so you can try it on a couple of different salads and see which is your favorite.
