Just a quick post today.
A super simple recipe for those days (like today) when there just isn't enough hours to get things done.
We are still in mid-summer meltdown around our house so, once again, the crockpot comes to the rescue.
You can serve this with rice or noodles, if you prefer, but I really like the texture the quinoa adds to this dish.
Crockpot Chicken and Broccoli with Quinoa
3 boneless, skinless chicken breasts
1 cup chicken broth
1/3 cup soy sauce, sodium reduced
1/4 cup brown sugar
1 Tbsp sesame oil
1 Tbsp rice vinegar
5 cloves garlic, minced
2 Tbsp cornstarch
2 Tbsp sauce from the crockpot after being cooked
4 cups fresh broccoli florets
Hot, cooked quinoa
Chop raw chicken into chunks. Spread evenly on bottom of crockpot.
In a small bowl, whisk together chicken broth, soy sauce, brown sugar, sesame oil, rice vinegar, and garlic. Pour over chicken.
Cook on low for 6 -8 hours, or until chicken is cooked.
In a cup, stir cornstarch and 2 Tbsp sauce from the crockpot until smooth. Add to crockpot and stir well to combine.
Add broccoli to the crockpot and stir to combine.
Cover and cook on high for an additional 30 minutes. The sauce needs to come to a boil to thicken.
Serve over hot quinoa.
Besides being super simple and flavorful, this is also pretty healthy.
Fitday tells me that for 1/6th of the above recipe plus 1/2 cup of quinoa is 335 calories, 7.5 fat, 35 carbs, and 33 protein.

I served mine with a side of our dad's cucumber salad. We will be sharing that recipe soon. It is perfect for summer!
