California Roll Sushi Salad With Wasabi Soy Sauce Dressing


Want to make the most amazing salad in the world... NAY..universe?
Okay...people who don't like sushi may not agree with me here BUT... in my opinion it's pretty hard to beat a salad that is this ridiculously tasty.
It's like eating a massive plate of sushi.
Yeah. Exciting, right? 
But wait, it gets better!
(According to Myfitnesspal) The nutritional count is fantastic too! For half of the recipe, yes, I said HALF of the entire recipe, it is: 240 calories, 30 carbs, 13 fat, 19 protein, and 9 fiber.  
Trust me when I say a portion of this is a HUMONGOUS portion. Don't take my word for it though - make it, it only takes a few minutes, and try it for yourself!


California Roll Sushi Salad With Wasabi Soy Sauce Dressing

Dressing
1 tsp wasabi paste
2 Tbsp soy sauce
2 Tbsp rice vinegar
1/2 tsp sugar
1/2 tsp sesame oil

Salad
4 cups raw, torn spinach
1 small head cauliflower, shredded
1 cup cucumber, diced
1/2 cup carrot, shredded
1 avocado, pitted and diced
1 (113g drained) can crab meat
10 Seaweed Snack Chips (or 1 Nori sheet) cut into pieces
2 tsp sesame seeds, toasted

Directions
In a small bowl, whisk together wasabi paste, soy sauce, rice vinegar, sugar, and sesame oil until smooth. Set aside until ready to use.
Dived the spinach between 2 serving plates. 
Top each with half of the "riced" cauliflower. 
Then top each with half the cucumber, carrot, avocado, and crab meat. 
You can make it look fancy schmancy like this...


Or, leave it simpler like this (I put half in a container for my lunch the following day) ....


Finally, sprinkle each with half of the toasted sesame seeds and drizzle with half of the dressing. Serve immediately. (If you want to have it for the next day as well, simply place the dressing in a separate container until ready to serve.


The dressing really makes it sushi-like. 
By using the shredded cauliflower instead of rice you might think it would take away from the sushi feel of the salad. 
Nope.
Honestly, you would never know it wasn't rice. If you want to you could steam it for a few minutes to soften it and make it even more rice-like but that is totally NOT necessary. The response I got from all of my taste testers was "Oh my gosh, it tastes like sushi!"
Yup. It does.

  2. This looks wonderful! The dressing and use of cauliflower is so different. I tried a similar recipe once, but your dressing puts it to shame. Can't wait to try this one!

  5. I am loving this...even before I read about the calorie count. Flavors of CA rolls without having to roll, which I'm no good with. Thank you for sharing. Looks like a fantastic, jealousy-inducing lunch.
