Spicy Ground Pork Quesadillas

 
On the spur of the moment I bought a pound of lean ground pork from the grocery store. Then I brought it home and had no idea what to do with it.
I wanted something for lunch but had no clue. Then I saw some leftover black beans and shredded cheese in the fridge aaaaaaand a couple of leftover tortillas in the freezer.

Spicy Ground Pork Quesadillas.
Just like that!
 
 
Spicy Ground Pork Quesadillas
 
Ingredients
1 Tbsp oil
1 lb lean ground pork
1/2 medium onion, chopped fine
1/2 red pepper, diced
1 cup black beans
2 Tbsp BBQ sauce
sprinkle cayenne pepper
salt & pepper
sprinkle garlic salt
sprinkle cumin
sprinkle curry powder
4 large tortillas
1/2 cup Parmesan cheese
1 cup shredded cheese (I used Mexican blend)
 
Directions
In medium frying pan, heat oil. Add pork and cook until there is barely any pink left. Add onion, red pepper, black beans, BBQ sauce, and spices. Continue cooking until pork is cooked through.
Heat panini press.
Place 4 large tortillas on counter. Spoon 2 Tbsp of Parmesan cheese onto half each tortilla.
 
 
Top each with 1/4 of the pork mixture.
 
 
Top that with 1/4 cup of shredded cheese per tortilla.
 
 
Fold tortilla in half to cover filling.
 
 
Using a large spatula, carefully lift tortilla and place on grill.
 
 
Close grill and press lightly. Cook until cheese is melted and tortilla is slightly crispy.
Let rest for a minute before cutting into quarters. Repeat with remaining tortillas.
 
 
Mmmm....spicy pork goodness. I was worried that it would be too crumbly to eat but all that melty cheese keeps things together wonderfully.
I ate 1 and froze the other 3. A few seconds in the microwave and they are as good as fresh.
I need to use my panini press more.

  1. I made these several weeks ago and we loved them! They were so much on our minds that we are already making them again. That is a rarity for me as we like to try new dishes all the time and lots of variety.
