Sue's Cheesy Stuffed Portobellos


Jo tells me that when I develop a recipe I also have to name it. Apparently I share her fantastically sad ability to come up with catchy names. 
These should have a name that includes words like - super, fantastic, easy, delicious, amazing but - try as I might - I just can't come up with a name that works. So...you are stuck with Sue's Cheesy Stuffed Portobellos. 
I apologize on behalf of these tasty little tidbits because, despite the lackluster name, they are so addicting. 
I developed this recipe by cleaning out the ingredients I had left in my fridge. A little of this, a little of that, and *voila* a delicious dinner magically appeared. 
Give them a try and hopefully you will love them as much as we did!


Sue's Cheesy Stuffed Portobellos

Ingredients
1 small onion, diced fine
1 stalk celery, diced fine
5 cloves garlic, minced
2 Tbsp BBQ sauce
1/2 cup Parmesan cheese, shredded
6 large portobello mushroom caps, stems removed
2 cups marble cheese, shredded

Directions
Preheat oven to 350. Spray a tray or pan that will hold all 6 caps with cooking spray, set aside.
In a frying pan over medium heat, cook and stir the the onion, celery, garlic, BBQ sauce, and Yves ground round until cooked through. 
Stir in the Parmesan cheese.
Top each portobello cap with equal amounts of the filling.
Top each with an equal amount of the shredded marble cheese.
Cook at 350 until cheese is melty and bubbly and browned, about 15 - 20 minutes. 
Serve hot.


Sorry I don't have more picks of the prep or ingredients - I didn't have high hopes for the recipe so didn't bother taking prep photos.
I probably should have. It turned out SO tasty! 
We had some company over and they raved over them. I will definitely be making them again.
If you don't have any of the Yves Meatless Ground Round you can, of course, use ground beef or ground turkey or even another brand of vegetarian meatless crumbles.
