Coconut Flour Double Chocolate Cookies

 
Sue made these delicious cookies a while ago and I made her make them for me again.
See, if someone else makes them for you - they are a gift - and gift's have no calories.
It could be true.
I mean....wouldn't that be the best thing ever? All of my gifts, ever, for the rest of my life would be chocolate...or cheesecake...or ice cream.

Coconut Flour Double Chocolate Cookies
 
Ingredients
4 Tbsp butter, softened
2/3 cup sugar
2 eggs
1 tsp vanilla
1/3 cup baking cocoa
1/4 cup + 1 Tbsp coconut flour
1/2 cup mini chocolate chips
1/2 cup walnuts, toasted/chopped
 
Directions
Preheat oven to 350°F. Line a cookie sheet with parchment paper, set aside.
Beat the butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Beat in vanilla.
Stir in the cocoa powder and beat until smooth, then stir in the coconut flour. Add the chocolate chips and walnuts.
Let the cookie dough sit for about 5 to 10 minutes to thicken (coconut flour absorbs moisture).
Drop the cookie dough by rounded spoonfuls onto a baking sheet, leaving 2 inches between cookies.
Bake 13 minutes, or until cookies are slightly set in the center. Allow cookies to cool on baking sheet for a few minutes before transferring to a wire rack to finish cooling.
 
Sue gets 18 cookies out of the recipe. I figured out the nutritional count using Fitday. Per cookie it is:
149 calories, 16 carbs, 9 fat, 3 protein.
I little high, I know, but - OMG - these are amazing!
Like little squishy chewy brownie bites that are so chocolatey your head will explode. If you are going gluten free then these are your new cookie - all you need to do is make sure you buy gluten free chocolate chips - and you are good to go.
