Chocolate Coffee Cookies with Coconut M&Ms


I haven't been feeling very well lately so haven't been baking or cooking a heck of a lot. 
I was going through my archives of photos and came across these little gems. I had forgotten about these guys. They are so easy to make, are so tasty, and the chocolate/coffee/coconut flavors go really well together. 
You start with a cake mix so...it's kind of like cheating. 
But cheating is okay when cookies are involved. 
Especially if no one knows you are cheating.
I won't tell if you won't.


Chocolate Coffee Cookies with Coconut M&Ms

Ingredients
1/4 cup strong coffee
1/4 cup butter
1 egg
1/2 bag Coconut M&Ms

Directions
Preheat oven to 375. Line a cookie sheet with parchment paper, set aside.
In a large mixing bowl, stir together the cake mix with the coffee, butter, and egg until well mixed. Batter will be very thick.
Using a medium cookie scoop (or large spoonful), place cookies about 2 inches apart on cookie sheet. Press 3 to 5 Coconut M&Ms on top of each cookie.


Bake cookie at 375 for 10 - 13 minutes, until tops appear dry, cookies have spread & puffed, and bottoms are slightly browned. (Do not over bake or cookies will be crunchy instead of chewy.)


Remove from heat and let cookies cool on cookie sheet for 5 minutes before moving to wire rack to cool completely. They do lose some of their puffiness as they cool so don't panic if your cookies are flat. They still taste fantastic and are still nice and chewy.


Easy peasy. 
I believe I got 24 cookies using the medium cookie scoop. 
Something a little bit different but not so scary that people won't want to try them. These sold really well at a bake sale we held a while back too.
