I usually like to try and put a healthy-ish spin on all of my recipes. Whether it's "they say chocolate is good for you" or "peanut butter is a good source of protein" spin, I can usually sell it with my recipe.
This one though....not so much.
It's pretty much the most unhealthy thing on the planet. There is no healthy spin to be found. It has sugar, sugar, chocolate, more sugar, and...for good measure...sugar.
You can see where I might run into some trouble selling this as the slightest bit healthy.
That being said.....
These cookies are delicious.
Like "I know more than one of these will give me diabetes but that's a chance I'm willing to take" delicious.
No Bake Peanut Butter Coconut 3-Chip Cookies
Ingredients
1 cup brown sugar
1 cup light corn syrup
1 cup chocolate chips
1 cup peanut butter
2 1/2 cup oats
1 1/2 cup coconut, shredded
1 cup Skor bits
1/2 cup white chocolate chips
1/2 cup peanut butter chips
Directions
Line a cookie sheet with plastic wrap, set aside.
In a large saucepan over medium heat, cook and stir the brown sugar and corn syrup until it comes to a full rolling boil.
Remove from heat. Stir in chocolate chips and peanut butter until melted.
Stir in oats, coconut, and Skor bits.
Lastly, stir in white chocolate and peanut butter chips. (You want to add these AFTER you have added everything else so they don't completely melt into the mixture. They will get melty but they won't disappear completely into the batter.)
Using a cookie scoop or spoon, scoop mixture onto prepared cookie sheet and let cool. You can set in fridge for 15 - 20 minutes to speed the process.
You don't have to work super fast or anything but you do want to get the cookies made before the mixture cools off otherwise it will be too hard to work with.
If you want to, you could also scrape into an 9 X 9 pan (or 9 X 13 for thinner bars) lined with plastic wrap or parchment paper sprayed with cooking spray, let it chill for 30 minutes, and cut into bars.
I like to think of these as "energy cookies" for when you need a little boost.
Oh...yeah...and they have oats. Oats are good for you, right?
That makes them healthier.
