Want to celebrate the holidays with something special? Something a little more extravagant than "the usual"?
Here is a recipe that is festive, easy, quick, and - most importantly - incredibly delicious.
I included some flavors that, for me anyway, definitely say "holiday time!"
If you follow Sue and I's blog then you know I am a huge fan of the 5 minute, single serving, microwave treats. Cakes, cookies, pasta, etc... you can make tons of tasty recipes in no time at all.
Looking at the pic above I bet you wouldn't have guessed it was a 5 minute microwave treat.
It was.
From start to finish was under 5 minutes. I was a little worried the texture might be off but, as it turns out, I worried for nothing. It was as close to oven baked french toast as you can get without actually baking it in the oven.
Holiday French Toast For One
Ingredients
1 tsp butter
2 slices bread, whole wheat/whole grain
1 egg
1 Tbsp pumpkin puree
2 Tbsp egg nog
sprinkle cinnamon
sprinkle nutmeg
1 Tbsp maple syrup
2 Tbsp whipped cream
Directions
Place butter in microwave container (I used a tart dish but you can use a large coffee mug). Microwave for 5 - 6 seconds, until butter is melted enough you can coat inside of container.
Cut your 2 slices of bread into cubes.
Loosely spread your bread cubes into your prepared dish. Don't press down!
In a seperate bowl, whisk together egg, pumpkin, eggnog, cinnamon and nutmeg.
Slowly drizzle egg mixture over bread until evenly coated. Using a fork, toss bread to coat.
Microwave until cooked - there should be no runny egg mixture. Start at 1 minute and then go in 20 second increments until done. Mine took 2 minutes 10 seconds.
If desired, drizzle with 1 tbsp maple syrup and 2 Tbsp whipped cream. (I also sprinkled a tad more cinnamon on top to make it look pretty.)

It tasted sooooo good. I love eggnog...and I love pumpkin.....this is a great way to incorporate the two flavors.
It tastes like Christmas.
True story.
Here's some good news about this dish. It's only 320 calories - without the syrup and whipped cream. With the syrup and cream? It is 415 calories. For something this decadent and delicious, I really didn't think that was too bad.
Calories - 320, fat - 9.2, carbs - 40, protein - 19.4. (without toppings)
Calories - 415, fat - 13.7, carbs - 54, protein - 19.7 (with toppings)
Christmas morning breakfast this year? I think so!
P.S. - If you really, really, really just have to bake it in the oven...I would think 375 for about 15 - 20 minutes should do it. But, you really, really don't have to. It is just as fantastic in the microwave.
