With all of the fairly heavy casseroles we have posted lately I thought we better blog about something a little lighter.
This Creamsicle Pudding is very light.
And fluffy.
And low calorie.
And delicious.
It is the perfect dessert to follow a heavy meal.
Plus...it is fairly inexpensive as it only contains 4 ingredients.
PLUS....it only takes 30 minutes to put together.
Plus plus plus...it looks soooo pretty.
Have I convinced you to try it yet?
(The container of Mandarins in the photo was the smallest I could find. I didn't use the whole container.)
Creamsicle Pudding
Ingredients
1 (10.2 gr) pkg of sugar free Orange Jell-O
1 small can Mandarin oranges, drained (about 1 1/2 cups)
1 (30 gr) pkg of Fat Free Instant Vanilla Pudding
1 1 litre container of Light Cool Whip (Or Fat Free Cool Whip)
Directions
Dissolve Orange Jell-O in 1 cup boiling water. Fill a 1 cup measuring cup 1/2 full with ice cubes and fill with cold water. Add to Jell-O. Stir until ice is melted and then set aside for 5 minutes.
Stir in 1 cup of Mandarin oranges. Save the other half cup for decorating the dessert.
With an electric mixer, blend in instant vanilla pudding, beating until well blended. Let stand for 15 minutes.
Fold in half the tub of Cool Whip.
Spoon into individual serving dishes or one large dish, top with remaining Cool Whip. Decorate with the remaining 1/2 cup mandarin slices.
Store, covered, in fridge until ready to serve.
I have made this several times as it is a perfect low calorie meal for those watching their calories. (This is an approximation using the nutritional info on the boxes - but only 64 calories per serving!! based on 12 servings.) It is also a great choice for a healthy alternative snack for kids during Halloween - you know, being all orangy and everything.
I am really curious to try this with different Jell-O and fruit.
For example: cranberry Jell-O with cranberries
or strawberry Jell-O with strawberries
or grape Jell-O with blueberries
or lime Jell-O with kiwi.
I was thinking for Christmas I could make a batch of either cranberry/strawberry and a batch of lime Jell-O with kiwi to get a pretty red and green theme going.
I can't think of another green Jell-O / fruit that might work. Any ideas?
Hey! Love the blog. I couldn't wait to try this recipe! Unfortunately the pudding wasn't creamy and silky like a traditional pudding at all. Is the consistency kind of thick and marshmallow, or was it just me? Lol! Thanks!
ReplyDeleteHmmm.... I don't know if I would say marshmallow-y but it is a little bit more mousse like than just plain pudding. I think it is the cool whip...
DeleteLime jello with a lime twist garnish would offer a nice "tart" flavour, almost margarita-ish.

DeleteYou can't boil alcohol, or else the alcohol would dissolve! LOL. But you could add 1 cup of liquor instead of the ice and cold water during that step if you wanted to do that route.

DeleteI just made this using peach jello and peaches. Because the lite peaches came in a peach and pear concentrate, I used that, adding water to make 1 cup to boil. The leftover peaches were chopped up and added at the end. Of course I still added a dollop of cool whip at serving. Thank you so much for this great low-cal dessert!

ReplyDeleteThe box says not to mix in kiwi (or pineapple, gingerroot, papaya, figs or guava), but pears might work well in the green, since they won't change the color. This sounds yummy! I'm gonna have to give it a whirl! My favorite combo as a kid was black cherries with bing (sweet) cherries mixed in. I think they were canned, but I may try this recipe and just thaw some frozen ones to avoid the syrup. Mmmm... and chocolate pudding mix! Oh, I'm so glad I'm going to the store this morning!
ReplyDeleteI just found this the other night. I made it today. I used the juice from the can instead of the water and ice. It was easy, fast and we liked it a lot. It came out looking pretty too which most of the time doesn't happen for me.

DeleteOne of the best tasting Jello deserts...two big boxes of the lime green jello and add one can of pineapple in its own juice. ..not syrup! Leave out just a small amount of the water so because of the pineapple juice. Add whip cream..so good!!!

ReplyDeleteI have made a variation on this with either strawberries or raspberries with appropriate jello for years. One the favorite family recipes for get togethers. LOVE IT!

ReplyDeleteI wouldn't think so - it may be too runny and not thicken up. But, that being said, if you give it a try let us know how it turns out.
