Skinny Caramel Coco-Mocha Milkshake


I had been wanting to make a skinny milkshake out of these tasty tasty toasted coconut pieces we bought on a trip to the city. They are Rockwell's brand Toasted Coconut Chips and they are amazing!
I had already made a Mounds Cheesecake Shake that involved some coconut but I knew that I wanted these coconut chips to be more of a player in my new invention. 
Enter the caramel coco-mocha.
Great name, right?
Yeah.... I didn't come up with that. I stink at naming things. No clue how to do it all. 
This brilliant gem was thought up by a co-worker at my office. (Thanks Taylor) All I had to do was ask her what she would call a shake with coconut and coffee in it. 
*boom* Fun and catchy name, just like that.
She's a genius. 
In all fairness though..... I am also a genius.

Make this and give it a taste. The combination of flavors need to happen a lot more often in the world. 
Actually... I'm pretty sure most of the world's issues could be solved with this milkshake. (Especially when it is only 268 calories, 32 carbs, 8 fat, and 16 protein - according to Myfitnesspal.) 


Skinny Caramel Coco-Mocha Milkshake

Ingredients
1/2 cup 0 fat Greek yogurt, plain (frozen)
1/3 cup Rockwell's Toasted Coconut Chips
3 frozen espresso ice cubes
1/3 cup 1% milk
1 Tbsp Smuckers Fat Free Caramel Ice Cream Topping
1/2 tsp coconut extract
ice cubes (optional) 
1 Tbsp light Cool Whip

Directions
Place frozen Greek yogurt, coconut chips, espresso ice cubes, milk, caramel, and coconut extract into a blender.


Process until smooth, scraping down sides as needed.
Add ice cubes, if using, and process until smooth again. 
Pour into serving glass and top with Cool Whip. (I reserved a pinch of the coconut chips and a pinch of the caramel to drizzle on top so it looked fancy schmancy.)


Dive in head first.


Listen to the angels singing as the flavors dance on your taste buds.


A couple of notes:
To make my espresso ice cubes I simply get an ordinary espresso and pour it into a regular ice cube tray and freeze it. You could use really strong coffee to make the ice cubes as well. 
You can, of course, use any brand of toasted coconut you wish. I used Rockwell brand to calculate the nutritional count so it may change if you use a different brand.
You can use coconut flavor Greek yogurt instead of the plain but, again - it may change the nutritional count. 
I add a handful or two of ice cubes to my milkshakes as I prefer the texture they add. You don't have to add them if you prefer your milkshakes more "pure". 


This is not a very sweet milkshake as I only added 1 Tbsp of caramel sauce and there is a good shot of  espresso in there. You can add more sweetener if you prefer it sweeter -just remember it changes the nutritional count too. You could even sub in maple syrup or something similar if you wanted to. 
P.S. - this recipe is a single serving so you can indulge in all that creamy goodness all by yourself!
