Easy Oreo Truffles

 
I still can't believe that these only need 3 ingredients.
True story.
Okay...well...if you are going to use them to make these cute stabby truffles for Halloween then you will also need some red icing and a teeny tiny edible knife...but, otherwise..
only 3 ingredients.
And they taste like cheesecake.

Yes, that is my squeal of delight. They are delicious.
I'm not sure who to credit for the recipe as it is everywhere on the internet. For the record, I didn't invent this recipe..but..I will continue to use it!
 
Easy Oreo Truffles
 
Ingredients
1 bag of Oreo cookies (about 36 cookies)
1 (8 oz) pkg cream cheese, softened
2 cups chocolate chips (or butterscotch...or white chocolate...etc...)
 
Directions
In a food processor, pulse cookies until they are fine. Throw in the cream cheese and pulse until well combined. Scrape into a bowl, cover with plastic wrap, and refrigerate for a couple of hours to firm up.
When firm, use a small cookie scoop or simply pinch off ping pong ball sized amounts, and roll into balls. Place on a cookie sheet lined with plastic wrap.
 
 
Freeze for about 15 - 25 minutes. (You don't want to freeze too long or the chocolate will be affected when you dip the truffles.)
Melt the chocolate chips of choice in a microwave safe cup in 20 second intervals, stirring between each interval. When chocolate is smooth you are ready to go.
Dip truffles in the chocolate (using a toothpick OR fork) remove from chocolate, shake off extra and place back on cookie sheet.
If you are making the stabby truffles then you can insert a small sugar knife into the top of the truffle and drizzle a little red icing around the knife.
 
 
They look pretty cute!
I always find the amount of chocolate for dipping will depend on how big you make your truffles. It is always good to have a few more chocolate chips on hand in case you need to melt more.
 
 
Here is a pic of them dipped in semi-sweet chocolate chips and drizzled with white chocolate.
These taste like mini Oreo cheesecakes.
Very addicting.
