Pecan Pie Bars

 
Need a square that is "not the usual" to bring to a function? You have got to try this one. All the flavor and texture of a pecan pie, now in a mini hand held bar version.
So sweet and flaky and crunchy and chewy.
Yes, all those things...really.
Plus, it is super-de-duper easy to whip up.
I made these a while ago for a bake sale and I am craving them again. (They sold very well, by the way.) I see some more happening in my future!
These are from the ancient cookbook that has lived under our counter for a million years. Who knew cookbooks without pictures could be full of so many amazing recipes?
 
Pecan Pie Bars
 
Ingredients
Crust
1 cup butter, room temp
1 1/2 cups flour
1/2 cup whole wheat flour
1/2 cup icing sugar
 
Topping
3 eggs
1/2 cup sugar
1 cup light corn syrup
2 tsp vanilla
1/4 cup butter, melted
2 cups pecans
 
Directions
Preheat oven to 350. Line a 9 X 13 pan with parchment paper and spray with cooking spray. Set aside.
For the crust - mix together butter, flours, and icing sugar. Press into the bottom of prepared pan.
 
 
Bake for approximately 15 minutes, or until lightly golden brown.
For the topping - beat eggs. Add sugar and mix. Add corn syrup, and vanilla. Stir in melted butter until well combined. Stir in pecans and pour onto crust.
Bake 30 minutes until golden brown.
 
 
Remove from oven and let cool on wire rack until cool. When it is completely cool, loosen sides of square from pan using a butter knife and, using parchment paper handles, lift out to cutting surface.
 
 
One little warning about these....the crust is fairly flaky you want to handle with a bit of care.
