St. Patrick's Day Jello Dessert


Happy St. Patrick's Day!
Sue and I decided to celebrate by putting a green twist on our Strawberry Sigh Layer Dessert (link HERE)  to celebrate today. 
If you are a fan of delicious things then you will enjoy this. No need to wait for St. Patrick's Day to make it BUT it does work well for a pretty green dessert after our Crock Pot Corned Beef with Carrots and Potatoes AND Guinness Gravy (link HERE).  
 Super-de-duper easy, tasty, and perfect for St. Patrick's Day. 
You're all set. 


St. Patrick's Day Jello Dessert

Ingredients
Bottom Layer
2 cups graham cracker crumbs
3 Tbsp sugar
3/4 cup butter, melted

Layer 2
1 (8 oz) pkg cream cheese, room temp
3/4 cup sugar
2 cups Cool Whip
green food coloring

Layer 3
1 box Lime Jello (4 serving size/398 ml)
2 cups boiling water
1 (20 oz) can crushed pineapple, undrained

Layer 4
2 cups Cool Whip

Directions
Preheat oven to 375. Lightly spray a 9 X 13 pan with cooking spray, set aside.
Prepare bottom layer - In a mixing bowl, stir together graham crumbs, sugar, and butter until well combined. Press into the bottom of the prepared pan. Bake at 375 for 10 minutes. Remove from heat and let cool.


Prepare layer 2 - Beat together cream cheese and sugar, scraping down sides of bowl as needed, until smooth. Fold in Cool Whip and several drops of green food coloring (as dark as you would prefer it).
Spread over cooled crust.


Prepare layer 3 - Whisk together Jello and boiling water until Jello is dissolved. Stir in pineapple. Allow mixture to sit in refrigerator to set slightly (about 30 - 45 minutes). Pour Jello over cream cheese layer.


Let set completely (about an hour or so)
Prepare layer 4 - Spread the remaining 2 cups of Cool Whip over the set Jello.


Chill until ready to serve.

You can also use a crushed pretzel crust for a little sweet and salty flavor in this recipe. 
This is a fairly light dessert while also being quite rich.
