Bourbon Peach Pie With Bacon Streusel


And the bacon-y-ness continues.
Yes, we are in the middle of bacon week and still have 3 or 4 more wild and crazy recipes to share. 
This pie is a perfect example of how you can add bacon to justaboutanything and it turns it into something magical. 
We took a classic peach pie, threw in a little booze, and then topped it with a lovely streusel with some crispy bacon and *voila* nouveau peach pie that will have your guests begging for the recipe. 


Bourbon Peach Pie With Bacon Streusel

Ingredients
Single Pie Crust (You can use 1/3 of our recipe HERE)

Pie Filling
7 cups peaches, peeled and diced
1/3 cup brown sugar
2 Tbsp Bourbon
2 Tbsp cornstarch
1 Tbsp lemon juice
1 tsp vanilla

Bacon Streusel
1/3 cup bacon, cooked and crumbled
1/2 cup brown sugar
1/2 cup flour
1 vanilla bean (Scraped and pod discarded)
1/4 cup butter, chilled

Directions
Preheat oven to 375. 
Roll out pie dough and lightly press into a 10 inch pie plate. Set in fridge while you prepare filling and streusel.


Place peaches in a large bowl.
Prepare filling - In a smaller bowl, whisk together brown sugar, bourbon, cornstarch, lemon juice, and vanilla until smooth.
Pour the mixture over the peaches and gently toss to cover. Set aside while you make streusel.


Prepare streusel - In a medium bowl, stir together bacon, brown sugar, flour, and vanilla bean seeds. Using a pastry blender or 2 knives, cut in chilled butter until mixture resembles coarse crumbs.


Assemble pie - Remove pie shell from fridge and evenly distribute the peaches in the shell.


Sprinkle the streusel evenly on top of the pie.


Bake at 375 for 15 minutes. Reduce heat to 350 and continue to bake until streusel and crust are browned, about 40 minutes or so.


Let sit until room temp before serving. Pie needs to set up.

NOW....if you are one of those people that is too scared to try something crazy like bacon in your pie then there is an easy alternative.
We also made this pie with toasted almonds instead of bacon....


It still looks just as beautiful and is just as tasty (minus the hint of salty bacon)/
Simply follow the exact recipe above but, instead of adding bacon to the streusel, simply add the equivalent in toasted, chopped almonds.


I definitely recommend trying the bacon but won't judge you (too much) if you just want to make the almond version. It may not seem like a lot of bourbon but it adds just the right amount of oomph to an otherwise "normal" peach pie. Definitely don't leave it out!

    1. Unfortunately no, the crust would get very soggy if you didn't bake it right away.
