Guinness Fruit & Spice Cake


Yup, it's another Guinness recipe.
We went a little nuts with the Guinness this year. 
This recipe is definitely a different type of beer recipe for me. I'm used to the Guinness + chocolate treats. 
I decided to take a regular spice cake and change it up a bit. The lime glaze really is a nice addition. I was a little afraid the Guinness would be overwhelming but there is just a subtle hint shining through the spices.

Guinness Fruit & Spice Cake

Ingredients
Cake
2 1/2 cups flour
2 tsp baking soda
2 tsp cinnamon
1 cup applesauce
1/2 cup mashed banana
1 cup brown sugar
2/3 cup coconut oil 
1 tsp vanilla
1/2 cup Guinness draught
1 cup pecans, chopped
1 cup craisins

Lime Glaze
1 1/2 - 2 cups icing sugar
juice and zest of 1 lime

Directions
Preheat oven to 350. Line a 9 X 13 pan with parchment paper, lightly spray with cooking spray, set aside.
In a large mixing bowl, stir together flour, baking soda, and cinnamon.
In another mixing bowl, beat together applesauce, banana, and brown sugar until smooth. Beat in the coconut oil and vanilla. 
Alternately beat the Guinness and dry ingredients into the wet ingredients until well combined. 
Fold in the pecans and craisins.
Mixture will be thick - spread evenly into the prepared pan.


Bake at 350 until toothpick inserted near center comes out clean - about 40 - 50 minutes. 


Let sit until cool enough to touch.
Prepare lime glaze - In a small bowl, whisk together icing sugar and lime zest and juice until smooth.


It should be the consistency of white glue - pourable but still a bit thick. Add a bit more icing sugar if necessary to thicken it (or a little water if you need to thin it - like a tsp at a time.)
Pour evenly over the still slightly warm cake. Use the back of a spoon to evenly spread it over the cake. 


Let cool completely. Use the parchment paper "handles" to remove the cake from the pan and cut and serve. (You can, of course, cut and serve it directly from the pan as well.)

Definitely the perfect thing for when you are wanting something different. 
Moist and full of flavor - perfect for dessert after St. Patrick's Day dinner. (Or for a St. Patrick's Day brunch).
