Maple Pecan Caramel White Chocolate Fudge

Yay! Another fudge recipe that requires absolutely NO boiling or candy thermometers.
This is a super easy, super fast, super tasty fudge recipe that you can have fun tweaking to your own preferences.
I decided to go with maple flavoring, toasted pecans, and little bits of caramel.
Other than having to chill for a while in the fridge, I think this took me maybe 5 minutes to make.
Nice, right?
Need a "Plan B" in case that complicated have-to-break-out-the-candy-thermometer fudge doesn't work out? Keep this in mind.
In fact... just go straight to Plan B and skip all the muss and fuss!

Maple Pecan Caramel White Chocolate Fudge

Ingredients
3 cups white chocolate chips
1 can sweetened condensed milk (approx 1 cup)
1/4 cup butter
2 - 3 tsp maple flavoring
1 1/2 cups pecans, toasted & chopped
1/4 cup Kraft caramels, chopped fine

Directions
Line an 8 X 8 pan (or 9 X 9 for thinner pieces) with parchment paper and then spray lightly with cooking spray.
In a medium saucepan over low to med/low heat, stir the white chocolate chips, sweetened condensed milk, and butter until melted and smooth.
Remove from heat and stir in the maple flavoring, pecans, and caramel.
Pour into prepared pan.

Chill in fridge until firm enough to cut, at least an hour.
Use the parchment paper to lift the fudge out of the pan so it is easier to cut.

Store, covered, in the fridge until ready to serve.
FYI - the white chocolate is quite a prominent flavor in this fudge. All the other flavors make an appearance but I would say the white chocolate is the most noticeable.
The texture of the fudge is incredibly smooth so the crunchy pecans and the chewy caramel bits make for a very impressive treat.

  5. Awesome recipe. However, having a print button on your recipes would make it so much easier on those of us who don't have a laptop, smart phone or tablet in the kitchen.

  6. Made this today to take to our family reunion. I scraped the pot after pouring it into a pan. This is fabulous!! I will be making this for Christmas from now on. BTW, I cant find caramel bits either. Chopping up caramels was just fine for me as I will be using the caramels to make caramel apple moonshine next month anyway. Also, I used 3 teaspoons of maple flavoring. Love this!

  10. I love caramel in things; unfortunately, many family members do not---if I left it out, does it seriously hurt the flavor/effect?

    1. The chopped caramels add quite a bit of texture to the fudge. You could leave them out but it definitely would change the result of the fudge. :)
