Mocha Browned Butter Salted Caramel Cookies


This is one of those cookies that you need to experience, not just eat.
I mean - take the phone off the hook, brew a nice cup of coffee (or hot chocolate if you are like me), get in your comfy pants, put your feet up, put your favorite movie/tv show on, and let the cookie eating begin. 
Even if you are not a coffee fan, the mocha flavor of this cookie when combined with the browned butter, chocolate, and salted caramel is just phenomenal. 
Like *jazz hands* PHENOMENAL!
You should make these.
Really.

Mocha Browned Butter Salted Caramel Cookies
(Slightly adapted from Kevin & Amanda)

Ingredients
1 cup butter
2 1/4 cup flour
2 Tbsp instant coffee granules
1 tsp baking soda
1 1/2 cups brown sugar
1 egg
1 egg yolk
2 tsp vanilla
1/2 cup Kraft caramels, quartered
1 cup mini chocolate chips
coarse sea salt, for sprinkling

Directions
Preheat oven to 350. Line a cookie sheet with parchment paper, set aside.
Brown the butter by placing it in a saucepan over medium heat. Once the butter starts to foam, begin whisking constantly. When the butter turns brown with little bits on the bottom, remove from heat and transfer to a large mixing bowl. Set aside to cool.
In a smaller mixing bowl, stir together flour and baking soda. Set aside.
When the butter has cooled (at least 20 minutes - I usually pop it in the fridge for 10 minutes), beat the butter and brown sugar together until smooth. Beat in egg, egg yolk, and vanilla until well combined.
Beat in the dry ingredients, caramels, and chocolate chips until just combined.


Using a medium cookie scoop (about 2 Tbsp), place about 2 inches apart on prepared cookie sheet. 
Bake at 350 until cookies are lightly browned on the bottom, about 10 minutes. 
When done, remove from heat and sprinkle with the coarse sea salt. Let cool on cookie sheet for 5 minutes before moving to wire rack to cool completely. 
*I used a small cookie scoop and a large cookie scoop just to get different sizes. The small ones (about 1 Tbsp) took about 5 minutes to cook, the large ones (about 3 Tbsp) took about 10 - 12 minutes. *


I love the crunchy-ish edge and soft and chewy center. 
And...don't even get me started on the gooey caramel and melty chocolate when these bad boys are warm...
Serve these at the next coffee time and see how many new best friends you end up with.
