Asian Inspired Prawn Salad With Sesame Dressing


Sue and I worked together to create this salad. We wanted another salad-as-a-meal salad for lunch that would be pretty, tasty, easy, and different. 
*voila*
Our Asian inspired salad and dressing was born. 
I was super-de-duper happy with the nutritional count on this one. According to Myfitnesspal the counts for the salad with ~2 Tbsp of dressing are:
253 calories, 32 carbs, 12 fat, and 13 protein.
Yes...I doubled checked it. 
A humongous plate of food (healthy, delicious food, might I add) for 250 calories. 
Sign me up. 


Asian Inspired Prawn Salad With Sesame Dressing

Ingredients
Dressing
1/4 cup oil (canola)
1 clove garlic, minced
1 tsp Sugar Twin Brown Sugar (or other sugar replacement)
2 Tbsp rice vinegar
1 Tbsp soy sauce
2 Tbsp water
1 Tbsp sesame oil
2 tsp fresh ginger, grated
1 tsp Thai Sweet Chili Sauce

Salad
2 cups spinach, chopped
2 cups lettuce, chopped
1/4 cup purple onion, diced
1/4 of a red bell pepper, diced
1 small mandarin orange, peeled
5 large prawns, cooked & tails removed
1/4 tsp sesame seeds

Directions
Prepare dressing - In a blender or food processor, place oil, garlic, Sugar Twin, rice vinegar, soy sauce, water, sesame oil, ginger, and chili sauce. Process until well blended. Set aside.


Prepare salad -- Line serving plate with chopped spinach, lettuce, and coleslaw mix. Sprinkle with diced onion and red pepper. Break the mandarin orange into segments and sprinkle over salad.
Take 5 large prawns with the tails removed and cut into smaller pieces. (I cut each prawn into 3 pieces.)
Sprinkle the pieces over the salad. 
Sprinkle with the sesame seeds. 
Drizzle with dressing. (I used 2 Tbsp of dressing in the above nutritional counts.)


I always cut enough for a salad for lunch the next day and put it in a container in the fridge with the dressing in a separate container.


Isn't it pretty?
I love all the bright colors. The sesame dressing is addicting too, by the way.
The count for JUST THE SALAD is 153 calories, 30 carbs, NO FAT, and 12 protein. Crazy, right?
