Cheeseburger Salad


So....yeaaaaaah....
It's about to get real up in here.
It's a cheeseburger but it's a salad. It's a salad but it's a cheeseburger. 
Think about that for a second. 
Let it sink in.
That whole plate full of deliciousness in the photo above is only 364 calories, 10 carbs, 39 fat, and 106 protein (according to Myfitnesspal).
What what!
I am pretty sure I must have died and woke up in cheeseburger heaven. All the tasty tasty crazy goodness of a burger without the carb-y bun. 
I'm still doing my happy dance over this recipe. The dressing, which is similar to a certain-famous-restaurant's "special sauce" is exactly what you need to top this off. 
AND I DON'T EVEN LIKE SALADS!
If you are not writing your shopping list right now of ingredients you need to go buy to make this...well....you should be. 


Cheeseburger Salad 

Ingredients
Dressing
2 Tbsp light mayo
2 Tbsp no fat Greek yogurt, plain
2 Tbsp ketchup
2 tsp water
1 tsp white vinegar
1 Tbsp hot dog relish (the green stuff)
1 Tbsp onion, minced
1 tsp Sugar Twin (or other sugar substitute)
dash of hot sauce
1/4 tsp sea salt
1 tsp olive oil

Hamburger Mixture
1 lb lean ground beef
1 medium onion, diced
3 cloves garlic, minced
1/4 tsp sea salt

Salad
1 head lettuce, chopped
12 cherry tomatoes, quartered
1 cup aged cheddar, shredded

Directions
Dressing - In a small bowl, whisk together the dressing ingredients until well combined. Set aside.
Hamburger - In a frying pan over medium heat, cook and stir onions, garlic, hamburger, and salt until hamburger is no longer pink and is cooked through. Set aside and keep warm.
Salad - Divide the lettuce among 4 plates. Divide the tomatoes evenly among the plates.
Divide the hamburger mixture between the 4 plates. Finally, top with equal amounts of the shredded cheese. Drizzle each with about 2 Tbsp of dressing. 
Serve immediately.


So...yeah.
I'm in love. Which is a big deal for me. My relationship with salad has been rocky over the years. Some hurtful things have been said that I may have to take back. I may have been overly judgmental when I called salads tasteless and boring and yucky. 
This.
Right here.

  1. I have to say that it's hard to wrap my head around the fact that this is only 364 calories. No matter. I'd rather wrap my mouth around it anyway.
