Simple No Bake Lemon Cheesecake Tart

 
Here is a dessert that is super simple yet you would easily be able to get away with telling your guests that slaved over it forever.
First of all, it's no bake.
Second of all, you use canned lemon curd.
Third, it's a pudding mix for the cheesecake.
Tell people it's a Lemon Cheesecake Tart - leave out the "Simple No Bake" part and people will believe you are the best host in the world.
They will never know it only took you a few minutes to put this together.
 
 
Simple No Bake Lemon Cheesecake Tart
 
Ingredients
Crust
3/4 cup graham cracker crumbs
2 Tbsp brown sugar
3 Tbsp butter, melted
 
Lemon Layer
1/2 cup lemon curd
 
Cheesecake Layer
1 box Jello Cheesecake pudding mix
2 cups whipping cream
1 tsp vanilla
 
Decorations
1 - 2 tsp graham cracker crumbs
 
Directions
Spray a tart pan with cooking spray. I used a 4 X 13 tart pan.
In a medium bowl, mix together crumbs, sugar, and butter. Stir until well combined. Press firmly into prepared tart pan. Place in freezer for about 15 minutes - or fridge for an hour or so, to firm up.
 
 
Spread the 1/2 cup of lemon curd over the crust.
 
 
Place in fridge while you prepare cheesecake layer.
In a large bowl, whip whipping cream until it just starts to thicken. Sprinkle in the cheesecake pudding mix and vanilla and beat until well combined and thickened.
Drop by spoonfuls over the lemon and carefully spread to cover OR use a piping bag and pipe tidy little blobs over the lemon to cover.
 
 
Sprinkle with 1 - 2 tsp of graham crumbs to decorate, if desired.
 
 
Let chill at least 2 hours, to set. Slice and serve.
(Store in fridge.)
 
 
I was excited to try and make something using the Jello Cheesecake flavored pudding mix that I got from a friend in the States. We don't have access to it here in Canada for some reason (Boo!)
It is very tasty and definitely has a cheesecake-y flavour.
A quick note - don't be tempted to add a lot more lemon curd - it will tend to squish out when you cut the tart.
Next time you are in a pinch for a quick, no fuss dessert - give this one a try!

  2. This looks dee-lish and super yummy! We can't get that cheesecake pudding in Cambodia either. I am an American missionary living overseas and we have to change recipes all the time. Maybe you could try whipping cream, cream cheese, powdered sugar and lemon juice or sour cream? It works like a charm for me. I also add a dash of vanilla at times. I make no-bake desserts all the time, so this is a keeper. Pinning!

  4. The Jello brand is fairly new in our country, but just last week I found {the last on the shelf} a box of Jello Cheesecake flavored pudding ! Now, I know what to do with it ;-) Thank you for sharing at our ALL MY BLOGGY FRIENDS party !
