Crazy Good Flax and Whole Wheat, Nut Cookies

 
Our mother brought home a magazine (The Eye Opener Fall 2012) from the health food store where she works. She wanted me to make the cookie recipe in it.
I was a little wary. It sounded a little sketchy...
Whole Wheat Flour?
Flax?
Coconut Sugar?
In cookies?
I was thinking, yeah, here's your dry, boring, healthy cardboard to enjoy.
As it turns out...I'm clearly a little over judgmental about healthified cookies.
These were amazing!
Yes, they do look a little "healthy cardboard-ish" BUT it turns out you can't judge a book by its cover.

Crazy Good Flax and Whole Wheat, NutCookies
(inspired by  The Eye Opener magazine)
 
Ingredients
1 cup butter, room temp
2 cups coconut sugar (I used coconut palm sugar)
2 eggs
2 tsp vanilla
1 cup all purpose flour
1 cup whole wheat flour
1/2 cup ground flax seed
1 cup oats
1 tsp baking soda
1 tsp baking powder
pinch sea salt
1 cup chopped peanuts
 
Directions
Preheat oven to 350. Line a cookie sheet with parchment paper. Set aside.
In a lare bowl, cream together the butter and coconut sugar until fluffy.
Add eggs, one at a time, beating until creamy. Beat in vanilla.
In another bowl, whisk together flours, oats, baking soda and powder, and salt.
Stir into the wet ingredients.
Stir in peanuts.
 
 
Using a small cookie scoop, or pinching into balls, place 2 inches apart on prepared cookie sheet.
Bake at 350 about 15 minutes, cookies will be lightly browned.
Remove from oven and let cool at least 5 minutes before removing to wire rack to cool completely.
 
 
The original recipe called for 2 cups of whole wheat flour, I changed it because I wasn't sure how I would like all whole wheat. Using half and half they tasted amazing. I think I will try all whole wheat next time just to see the difference.
Oh, yes, the original recipe also called for 2 cups of chopped almonds. I subbed in 1 cup of chopped peanuts. I think 2 cups would have been overwhelming.

These have a rich, buttery flavor and are that wonderful combination of crispy/chewy that makes cookies so addicting.

    1. It was in the baking aisle with the regular sugar/icing sugar/brown sugar! I had never noticed it before lol
