Cinnamon Toast Crunch Cupcakes

 
Sue and I wanted to make a cupcake that was a little out of the ordinary for a fundraiser a little while ago. We came across several recipes on Pinterest that use cereal or, rather, crushed up cereal, to flavor cupcakes.
Good idea, right?
Needless to say, Sue and I are all aboard the cereal-cupcake train!
We decided to start with our "plain" vanilla cake and add some smooshed up Cinnamon Toast Crunch. It is really good! You can tell it's not just cinnamon added to the batter.
We can't wait to try Captain Crunch, Trix, Cocoa Puffs, or even Fruit Loops.
I think the addition of the cereal crumbs to the frosting is my favorite part. It would be delicious on a spice cake or carrot cake.
 
 
Cinnamon Toast Crunch Cupcakes
 
Ingredients
Cupcakes
1/2 cup buttermilk
2 Tbsp butter
2 eggs
1 cup sugar
1 tsp vanilla
1 cup flour
1/4 cup Cinnamon Toast Crunch crumbs, fine
1 tsp cinnamon
1 tsp baking powder
pinch salt
 
Cinnamon Toast Crunch Cream Cheese Frosting
1 brick (8oz) cream cheese, room temp
1/2 cup butter, room temp
2 tsp vanilla
2 3/4 cups icing sugar
3/4 cup Cinnamon Toast Crunch crumbs, fine
 
Directions
Preheat oven to 350. Line 12 muffin tins with cupcake liners.
Heat buttermilk and butter over medium heat until butter is melted. Remove from heat.
Beat together; eggs, sugar, and vanilla. Beat in flour, cereal crumbs, cinnamon, baking powder, and salt.
Slowly beat in hot milk. Mix until well combined.
Pour into prepared muffin tins.
Bake at 350 for approx 15 - 20 minutes. Toothpick inserted near center should come out clean.
 
 
Let cool. When completely cool, frost with the Cinnamon Toast Crunch Cream Cheese Frosting.
Beat together cream cheese, butter, and vanilla until smooth. Slowly beat in icing sugar and cereal crumbs.
 
 
Top with a square of the cereal for garnish.
 
 
They look so cute. Kids and adults alike will really like these cupcakes.
They are moist and cinnamon-y and the icing is addicting!
I love the thought of adding a little crushed up cereal to a cupcake for something different. It's like baking a bit of your childhood into a cake.
Who doesn't like that?
