Fiber One Cookies

I found these cookies that taste extremely chocolaty and yet have lots of fibre in them. That makes them a touch more healthy than your average chocolate cookie.
Jo gave them her they-don't-taste-like-they-are-healthy-but-are-delicious-and-chocolaty thumbs up.
I thought these were okay. As you may or may not know, I'm not a huge fan of the sweet stuff. I didn't find these overly sweet.
Just right.
I will say you will probably want to eat these within a day or two of making them though....after a couple of days the Fibre One crunchy bits get a little soft. They are still tasty but the texture changes.
 
 
Fiber One Cookie
(Slightly adapted from Betty Crocker)
 
Ingredients
1 box (1 lb 2.3 oz) Fudge Brownie Mix
2 cups Fiber One original bran cereal
1/3 cup water
1 egg
1 Tbsp vegetable oil
1 tsp vanilla  
2 Tbsp miniature semisweet chocolate chips
 
Directions
Heat oven to 350°F. Line cookie sheet with parchment paper. Set aside.
In large bowl, mix ingredients together with a spoon until well combined.
Drop dough by rounded tablespoonfuls 2 inches apart on cookie sheet.
Bake 10 to 12 minutes until set.
Cool 2 minutes on cookie sheet; remove from cookie sheets to cooling rack. Cool completely.
 
It doesn't get much simpler than that. According to the Betty Crocker recipe the nutritional info is:
Calories - 70
Fat - 1
Carbs - 13
Fibre - 2
That is PER COOKIE.
Okay, not exactly the healthiest cookie available BUT they are delicious and they are a great way to get some more fibre in your diet. (AND, if you want to add even more fibre.....throw in a tablespoon of ground flax seed. It won't affect the flavor or texture but it will up the fibre content even more!)
The kids will never know!

    1. They are very delicious! The Betty Crocker site, where we found the recipe, calculate 42 servings out of this recipe. (I don't honestly remember if we got 42 or not, it may have been a few more or a few less)
