Crockpot Chicken and Broccoli with Quinoa


Just a quick post today.
A super simple recipe for those days (like today) when there just isn't enough hours to get things done.
We are still in mid-summer meltdown around our house so, once again, the crockpot comes to the rescue.
You can serve this with rice or noodles, if you prefer, but I really like the texture the quinoa adds to this dish.


Crockpot Chicken and Broccoli with Quinoa

Ingredients
3 boneless, skinless chicken breasts
1 cup chicken broth
1/3 cup soy sauce, sodium reduced
1/4 cup brown sugar
1 Tbsp sesame oil
1 Tbsp rice vinegar
5 cloves garlic, minced
2 Tbsp cornstarch
2 Tbsp sauce from the crockpot after being cooked
4 cups fresh broccoli florets
Hot, cooked quinoa

Directions
Chop raw chicken into chunks. Spread evenly on bottom of crockpot.
In a small bowl, whisk together chicken broth, soy sauce, brown sugar, sesame oil, rice vinegar, and garlic. Pour over chicken.
Cook on low for 6 -8 hours, or until chicken is cooked.
In a cup, stir cornstarch and 2 Tbsp sauce from the crockpot until smooth. Add to crockpot and stir well to combine.
Add broccoli to the crockpot and stir to combine.
Cover and cook on high for an additional 30 minutes. The sauce needs to come to a boil to thicken.
Serve over hot quinoa.

Besides being super simple and flavorful, this is also pretty healthy.
Fitday tells me that for 1/6th of the above recipe plus 1/2 cup of quinoa is 335 calories, 7.5 fat, 35 carbs, and 33 protein.
(Without the quinoa - 1/6th of the recipe is: 235 calories, 5.5 fat, 16 carbs, 29 protein)
I served mine with a side of our dad's cucumber salad. We will be sharing that recipe soon. It is perfect for summer!

  1. Hi, this looks really good! I'm just wondering what I could replace the corn starch with, I'm allergic. I also can not do soy. Any tips??

    1. Hmmmmm......I googled replacements for cornstarch and these were the recommendations - arrowroot flour/starch or potato starch. Or, you could try flour. Hope that helps!

  2. This looks amazing, also I have heard of liquid aminos as being a soy sauce substitute. I have seen it at Publix (Florida girl)

  3. Amazing! Made for dinner yesterday and took for lunch today! Was good over quinoa but great over rice. Of course... not as healthy.
