Turkey Spinach Avocado Burgers



Craving a big, juicy, unhinge-your-jaw-so-you-can-fit-it-in-your-mouth burger?
I was.
Thing is, I'm trying to watch what I eat and cut carbs and calories and blah de blah blah blah.
Trying to lose weight sucks.
*sigh*
Anyway...this story has a happy ending.
I made the most enormous, mouthwatering, everything-you-could-ask-for-except-the-bad-stuff burger that was totally satisfying.
Like...t-to-the-otally satisfying...
Plus, it was full of good stuff! Lean ground turkey, spinach, garlic, tomato, and avocado (which I have an enormous amount of trouble spelling, by the way. I have to say Aaaah - Vo - Caaaw - D'oh out loud so I can spell it correctly.)
Instead of a regular, high carb bun I made the 5 Minute Low Carb Bun and it worked fantastic.



Turkey Spinach Avocado Burgers

Ingredients
4 cloves garlic, finely chopped
2 - 3 cups baby spinach
1 lb ground turkey
1 small egg
salt & pepper
1 avocado, sliced
4 slices of tomato
extra baby spinach for burger topping

Directions
Spray a large frying pan with cooking spray.
Over medium heat, cook garlic for about 2 minutes, until fragrant. Add in 2 -3 cups of spinach and cook until spinach is cooked down. Remove from heat and let cool for about 10 minutes.
Add cooked spinach and garlic to the ground turkey. Mix in egg until well combined. Season with salt & pepper. Form into 4 equal patties.
Cook patties in the same large frying pan that you cooked the garlic and spinach in. You may want to spray the pan again before adding the patties.
Remember to cook over medium heat and don't rush them! Let them cook slowly  and they will hold together beautifully and stay moist and juicy.


While they are cooking, make your Low Carb Bun , toast it, and top with 1/4 of the avocado, 1 slice of tomato, and some raw baby spinach. I also added some mustard.
The one I made for my mother also had some turkey bacon on it!


You can basically add whatever toppings you like, pretty much just like a regular burger, but with the toppings I added above the nutritional info (according to Fitday) was as follows:
Jo's Turkey burger
Calories: 630, Fat: 45, Carbs: 19, Protein: 42
VS.
Restaurant "regular burger" (Chili's Avocado Burger)
Calories: 1,140, Fat: 71, Carbs: 72, Protein: 53
VS.
Homemade "regular burger" with Avocado
Calories: 650, Fat: 37, Carbs: 45, Protein: 38

It was soooo yummy. I love avocado. In case you need a reason to eat avocado (because you are a little crazy and don't LOVE it's creamy delicious flavor) check out this site: 5 reasons to eat more avocados. Turns out they are healthy as well as tasty.
I thought the calories were a little high for a burger at 630, but it was so filling that my small side salad was all I needed to eat with it for dinner..and....under 700 calories for dinner is what I aim for.
It certainly helped with my craving for a burger. I'm aiming for under 1,500 calories a day in my diet and with this burger I can keep it under 1,500 easily.
