Molasses Peanut Butter Mousse


This summer Sue and I have been coming up with molasses recipes to entire in the Crosby's Molasses "Sweeten Your Summer With Molasses"contest. (Go HERE to see how you can enter too.) 
Developing recipes that are perfect for BBQ weather is challenging and fun. I admit, normally when I think of molasses I think of gingerbread cookies and Christmas.
Turns out though, when you add a little Greek yogurt and peanut butter to molasses you come up with a perfect summer dessert. 
Want to serve it at your next BBQ? Instead of serving it in dessert cups, simple scoop it into little mason jars and place in a cooler to keep cool until after dinner. 
Your guests won't be disappointed! Kids and adults alike will be all over this smooth and creamy, rich and dreamy, fabulous new combination of flavors!


Molasses Peanut Butter Mousse

Ingredients
1 cup 0 fat, plain Greek yogurt
1/4 cup Crosby's Fancy Molasses
2 Tbsp smooth peanut butter
pinch salt
1 cup Light Cool Whip

Decoration
4 Tbsp Light Cool Whip
2 tsp Crosby's Fancy Molasses

Directions
In a bowl, stir together the Greek yogurt, Crosby's Fancy Molasses, peanut butter, and pinch of salt until well combined.
Gently stir in the Cool Whip. Spoon into individual serving dishes (or little mason jars!)
Chill until ready to serve - at least an hour.
Just before serving, top each with a spoonful of Cool Whip and drizzle with 1/2 tsp of Crosby's Fancy Molasses. 


So incredibly rich and smooth. 


It's ridiculous how easy this is to make. Literally not even 5 minutes and then let it chill. 
Perfect for summer - NO heat involved. That's always good. Plus, it's easy to double or even triple if you are having a larger get together. 
Oh, yeah, according to Myfitness pal, one serving of this (recipe makes 4 - approx 1/2 cup servings) is - 184 calories, 5 fat, 27 carbs, 8 protein, 1 fiber. Not to mention all the healthy things that come along with molasses, peanut butter, and Greek yogurt.
