Banana Scones with Brown Sugar Glaze


It's officially banana scone time. 
I don't know who you have to petition to get a national food day organized but.... it needs to happen for banana scone day. 
First off - scones of any kind are the best thing on the planet. True story. Don't even argue.
Secondly - bananas make things taste fantastic. Also a true story.
So, put scones and bananas together and *boom*  mind blowingly addictive treats happen.
Banana Scone Day.
It's a thing now. 


Banana Scones With Brown Sugar Glaze

Ingredients
Scones
5 bananas mashed
2 - 4 Tbsp whipping cream (Enough to bring the mashed bananas to 2 full cups)
1 cup Greek Yogurt Caramel flavor(or honey or maple syrup)
4 cups flour
1 cup whole wheat flour
1 Tbsp baking powder
pinch salt
2 tsp cinnamon
1/2 cup butter, frozen

Glaze
1 Tbsp butter, melted
2 Tbsp whipping cream
4 Tbsp brown sugar
1/2 tsp cinnamon
1/2 cup icing sugar

Directions
Preheat oven to 400. Line a cookie sheet with parchment paper, set aside.
In a large bowl, place mashed bananas, whipping cream, and Greek yogurt. 
In a separate bowl, whisk together flour, whole wheat flour, baking powder, salt, and cinnamon. Using a cheese grater - grate in the frozen butter. Using your hands, mix the grated butter into the flour to make sure it is incorporated and mixture resembles course crumbs. 
Stir the banana/yogurt mixture into the dry ingredients until just mixed - do not over mix! 
Scrape dough onto a well floured surface. Pat or roll out to about 3/4 to 1 inch thickness. Cut with a biscuit cutter or simply cut into squares or triangle shapes.  Place about 2 inches apart on prepared cookie sheet.


Bake at 400 for approx 20 minutes, until tops are golden brown.


Remove from heat and place on wire racks. Let cool a little while preparing brown sugar glaze.
Prepare glaze - Whisk together melted butter, whipping cream, brown sugar, cinnamon and icing sugar until smooth. Spoon evenly onto warm scones and spread to cover the tops.


These are best enjoyed warm, the day they are made but room temp is also good.
The brown sugar glaze is AMAZING!!

  2. They sound wonderful and they are very pretty. The brown sugar glaze does sound amazing too! My sister and I were just talking about how we had never made scones and we were going to try it one of these days. Now you have definitely given us reason to give it a try.
