Granola Cookies with Cocoa Nibs

 
I want to tell you that these cookies are healthy and nutritious breakfast cookies.
They aren't, of course.
At all.
But that's what I want to tell you.
See...they have granola and dark chocolate cocoa nibs and even toasted pecans. We all know granola can be good for you, and cocoa nibs are better for you than chocolate chips, and pecans are nuts and nuts are healthy. Thing is...I kind of corrupted them with butter and sugar and flour and more sugar.
You should still make these though.
They are delicious.
And...if you eat around the "bad" stuff...they still count as healthy. Or, here's an even better idea, eat them while you pace back in forth in your kitchen and then you are actually burning off calories while you eat them. (Bonus points for you if you put on a leotard and tights and headband and play some "Let's Get Physical" by Olivia Newton John.)
 
 
Granola Cookies with Cocoa Nibs
 
Ingredients
1 1/3 cup flour
1/2 tsp baking soda
pinch salt
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter, melted
1 egg
2 tsp vanilla
1 cup granola, in small pieces
1/2 cup cocoa nibs
1/3 cup pecans, toasted, chopped
 
Directions
Preheat oven to 350. Line cookie sheet with parchment paper, set aside.
In a large bowl, whisk together flour, baking soda, salt, sugar, and brown sugar.
In a small bowl, mix together melted butter, egg, and vanilla.
Mix wet ingredients into dry ingredients and stir well. Stir in granola, cocoa nibs, and pecans.
 
 
Use a small cookie scoop (or pinch off 1 inch bits and roll into balls) and drop dough on cooking sheet about 2 inches apart. Flatten gently with a fork.
 
 
Bake at 350 for 10 - 12 minutes, until cookie is light golden brown. Remove from heat and let cool on pan for 5 minutes, remove to wire rack to cool completely.
 
 
Look at how healthy they look. You can see bits of granola peeking out and everything. That has to count for something.
So, here is how you can enjoy these cookies.
Way number 1 - pretend they are healthy and strut around telling everyone how awesome you are for being so health conscious.
Way number 2 - acknowledge that these are not at all healthy for you and strut around telling everyone how awesome you are for making delicious cookies.
