Single Serving Pancakes


I created this recipe because I wanted pancakes.
Obviously.
Thing is, I didn't want to make a whole big batch of batter because it was only me eating them.
I know, I know....I could have just made them up and froze them. Except that I would have eaten way more than I should have.
Pancakes are my kryptonite.
I thought I would see if I could create my own single serving batter. Turned out pretty tasty. I even worked out the nutritional value using Fitday.
There is 300 calories, 10 fat, 37 carbs, and 13 protein.
That's for the whole recipe!
Depending on how thick your batter gets you will get either 2 or 3 pancakes out of this.
Throw on 1/2 Tbsp butter and 2 Tbsp light pancake syrup and you get 405 calories for breakfast (16 fat, 50 carbs, 13 protein)!
For me that's a pretty darn good breakfast.


Single Serving Pancakes

Ingredients
1/3 cup flour
2 tsp ground flax
1/4 tsp baking soda
1/2 tsp baking powder
generous sprinkle of cinnamon
pinch salt
1 egg, large
1/4 cup milk (I used 1%)
1 tsp oil
1/2 tsp vanilla

Directions
In a small bowl, whisk together flour, flax, baking soda and powder, cinnamon, and salt.
In a medium bowl, whisk together egg, milk, oil, and vanilla.
Using a fork, stir dry ingredients into wet ingredients until just combined. Do not overmix. Batter will be a bit lumpy.
Preheat a fry pan over medium heat. Spray lightly with cooking spray.
Scoop 1/3 cup of batter onto hot pan and shake pan gently to even out batter. Cook until bubbles form on surface.


Carefully flip the pancake over and cook other side until golden brown. This will only take about a minute.


Repeat with remaining batter.
Serve hot with favorite pancake topping. I love butter and syrup or peanut butter and syrup.


Depending on the size of the egg I use I either get 2 or 3 pancakes out of this recipe. If you use a small egg then you can try another tablespoon of milk to thin it a bit.

There you have it!
Enough pancakes to calm the pancake craving but not enough for a pancake overdose.
I add the 2 tsp of flax to up the nutritional value a bit but you could sub in wheat germ or bran or something like that as well.

  3. I tried this recipe today for my two kids 3 and under. They gobbled them up in no time! To me, they weren't quite traditional pancakes, but almost a French Toast-Pancake combination:) Yum!! Thanks for sharing the recipe :) ---melissa

  6. I agree, has a French Toast feel but I think if you cut back on a little of the egg mixture that would help. I liked it that way though :) Kids enjoyed. It was enough for a 4, 14 and an adult with fruit.
